Frozen yogurt is back on café menus, often served next to açaí soft-serve with a build-your-own toppings bar. Fruit is the easiest topping to get right. Here is how pulp, compote and sauce differ, which fruits suit froyo's tang, and what to read on a packed topping. Concepts only, no recipes.
What's happening
On 16 October 2026, ETHospitalityWorld reported a new frozen Greek yogurt and açaí soft-serve bar in Indiranagar, Bengaluru. Its froyo is made in-house in small batches, açaí is served as soft-serve, and a toppings bar offers sauces and add-ons, most made in-house, including a strawberry compote. The founders talk about balancing the tartness of the yogurt with fruit, crunch and richer toppings.
That is the opportunity for fruit: contrast. Froyo is cold, creamy and tangy, so fruit should add colour, juiciness and a little sweetness.
Pulp vs compote vs sauce
| Format | What it is | Texture on froyo | Best use |
|---|---|---|---|
| Fruit pulp | Fruit flesh blended smooth | Bright, soft, spoonable | Swirls and ripples |
| Compote | Fruit pieces gently cooked in light syrup | Juicy pieces you can see | Hero topping, layered cups |
| Fruit sauce | Smooth, glossy and pourable | Shiny drizzle | Finishing pour, signature cups |
Concept-level process (no formulas): select ripe fruit → wash and cut → blend (pulp) or cook gently in pieces (compote) or cook and strain (sauce) → cool quickly → store cold and use within its shelf life.
Fruits that suit tangy froyo
- Strawberry: the classic. Compote keeps the pieces visible.
- Mango: pulp swirl for a familiar Indian flavour.
- Blueberry: deep colour as compote or sauce.
- Jamun: a violet, sweet-astringent sauce for a desi twist.
- Passion fruit: sharp and aromatic, a little goes a long way.
- Guava: pink guava pulp is fragrant and tangy.
Fusion cups (concepts): mango-cardamom swirl with toasted almond; jamun sauce with a black-salt crunch; strawberry compote with a basil leaf.
Reading a packed topping
FSSAI's Labelling and Display Regulations require a name that reflects the true nature of the food, an ingredient list in descending order, and a declared percentage for an ingredient highlighted in words or pictures. So a "strawberry topping" with strawberries pictured should show how much strawberry it contains. Check that before you buy for a café or for home.
A note on sugar
Toppings and sauces add sugar to an already sweet dessert. ICMR-NIN's Dietary Guidelines for Indians advise limiting added sugar. Fruit composition varies by fruit and ripeness; ICMR-NIN's Indian Food Composition Tables 2017 list values for common fruits.

Questions
What is the difference between fruit pulp, compote and sauce?
Pulp is fruit flesh blended smooth. Compote is fruit pieces gently cooked in a light syrup, so you still see the fruit. Sauce is smoother and glossier and is made to pour. All three can top frozen yogurt.
Which fruits go best with frozen yogurt?
Fruits with a sweet-tart balance, such as strawberry, mango, blueberry, jamun, passion fruit and guava, stand out against froyo's tang. Very watery fruit can make the top icy, so pulp or compote often works better than fresh slices for these.
Is frozen yogurt with fruit a health food?
It is a dessert. Toppings, sauces and syrups often add sugar. Enjoy it as a treat. General information, not medical advice.
What should I check on a packed fruit topping?
Check the name of the food, the ingredient list in descending order and, where the fruit is highlighted in words or pictures, the declared fruit percentage. FSSAI's labelling rules require these.
