Function only. This page does not make a nutrition or health claim.
- What it does
- Put a visible fruit ribbon into ice cream at the freezer and keep that ribbon after freeze and thaw.
- In the plant
- Viscosity aimed at a ripple pump rather than a yoghurt fold-in
- Designed against freeze and thaw
- Briefed separately from inclusions, which are pieces rather than a ribbon
Formats you can brief
Blueberry ripple
A thick blueberry sauce pumped into ice cream so it stays as a ribbon.
Reduced-sugar ripple
The same ripple style with a reduced-sugar option, on request.
The core ripple is blueberry. It is available for sampling. A reduced-sugar ripple option is available on request.
Ripple and inclusion
A ripple or variegate is the ribbon. An inclusion is a piece, and that is a different brief: see inclusions. Starting from a dairy fold-in when you need a freezer ribbon wastes the trial. The variegate guide defines the words.
What the trial checks
Whether the ribbon holds on your freezer, and whether the colour stays in the ribbon. Those are line observations. They are not a published capacity.
Chilli-guava, jamun and other Indian-fruit ripples are in development. Ask for a pilot sample from the in-development list.
