7 days. 7 fruit café refreshers. Monday → Sunday. One glass a day, each built on one hero fruit and one accent. Save this lineup for the week. Concepts and ingredient names only, no recipes.

Why this lineup works

Café culture in India is moving from a lifestyle treat to an everyday habit, according to café leaders at ET FoodXP 2026 (ETHospitalityWorld, 28 Oct 2026). Regulars want something new without a long wait. A rotating day-by-day lineup gives variety from a short list of fruit bases.

The pattern is simple: one hero fruit + one accent (herb, spice, citrus or coffee). The week moves from juicy to tangy, then bright, then mellow.

Monday · Watermelon basil cooler

Watermelon is mostly water and tastes clean. Basil adds a green, slightly peppery note, and lime keeps it lively. A soft start to the week.

Tuesday · Kokum soda

Kokum is the Konkan coast's sour, ruby fruit. Roasted cumin rounds the sourness. Soda makes it a café fizz rather than a home sherbet.

Wednesday · Raw mango jaljeera

Raw mango brings sharp tang, and jaljeera spices (cumin, mint and black salt) bring the savoury, cooling street-drink feel.

Thursday · Orange espresso tonic

A coffee–fruit drink: orange brightens espresso's bitterness, and tonic adds sparkle. It is an easy bridge for coffee regulars.

Friday · Pomegranate lime cooler

Pomegranate is tart and deep red. Lime and mint lift it so it doesn't feel heavy.

Saturday · Strawberry pink lemonade

A weekend crowd-pleaser: strawberry sweetness with lemon's sharpness and a raspberry note for colour.

Sunday · Peach iced tea

Peach softens black tea's tannins. A slice of orange keeps it bright. A calm way to close the week.

Make it a café menu (concept level)

  • Fewer bases, more drinks. Watermelon, kokum, raw mango, orange, pomegranate, strawberry and peach bases cover all seven days.
  • Prep stays the same every day: base + accent + chill or fizz + garnish. Staff learn one process and run seven drinks.
  • Name drinks honestly. If a drink uses a fruit base or concentrate, don't call it "fresh-pressed".

A note on sugar and salt

Refreshers often contain added sugar, and jaljeera-style drinks contain salt. ICMR-NIN's Dietary Guidelines for Indians advise limiting both. These are flavour concepts, not health products.

Save this week's lineup and share it with the friend who orders the same cold coffee every day.

Questions

Are these recipes?

No. This is a concept lineup with flavour notes and ingredient names only. We do not publish quantities or commercial formulas.

Why pair one fruit with one accent?

A single hero fruit keeps the flavour clear, and one accent, such as basil, cumin, lime or coffee, gives contrast without crowding the glass. It also keeps a café's prep simple.

Are these drinks healthy?

They are refreshers, not health products. Many café coolers contain added sugar and some contain salt. ICMR-NIN's Dietary Guidelines for Indians advise limiting both. General information, not medical advice.

Can cafés use fruit bases for these?

Yes. Ready fruit bases and concentrates help cafés keep taste consistent and prep fast. Frootrition develops custom fruit bases for food-service partners.
