India's café business is changing. At ET FoodXP 2026, café operators told the panel that cafés are moving from a lifestyle trend to an everyday habit. They also flagged rising rentals, more compact formats and the need for food-led revenue. Here is where fruit fits on a habit-led café menu. Concepts only, no recipes.

What the panel said

ETHospitalityWorld (28 Oct 2026) reported the panel's main points:

  • From trend to habit. Café visits are becoming part of daily routines. One chain head put it simply: "When it becomes a habit, it is not a trend."
  • Rentals and unit economics. High rentals and operating pressures are making operators rethink expansion.
  • Two kinds of café. Destination cafés built for socialising, and compact formats focused on convenience and product quality.
  • Food-led revenue and differentiation. Growing coffee demand alone does not guarantee profit. Menu strategy and product quality matter.

Why fruit fits a habit-led menu

A daily customer wants variety without waiting. Fruit drinks and fruit desserts help a café:

  1. Add non-coffee and lighter options for second and third visits in a week.
  2. Lift ticket size with a dessert or snack add-on.
  3. Stand out with a signature drink that competitors do not have.

For compact cafés, the catch is prep: cutting fruit takes counter space, time and staff, and creates waste. Ready fruit bases keep service fast and taste consistent.

Rotate one seasonal fruit special each month, such as citrus in winter, mango in summer and jamun in the monsoon, so regulars have a reason to try something new.

Practical checkpoints

  • Keep the list short. Three or four fruit drinks are easier to run than ten.
  • Name drinks honestly. If a drink uses a fruit base, don't call it "fresh-pressed".
  • Hygiene. Fruit prep counts under FSSAI hygiene requirements for food-service businesses. See our note on Schedule 4 hygiene for fruit prep.
  • Sugar and claims. If you print "no added sugar", follow the FSSAI Advertising and Claims Regulations.

Questions

What did the ET FoodXP 2026 café panel say?

As reported by ETHospitalityWorld on 28 October 2026, café leaders said India's café culture is moving from a lifestyle trend to an everyday habit. They discussed rising rentals, the gap between destination cafés and compact convenience formats, food-led revenue opportunities, and the importance of product quality and authenticity.

Why do fruit drinks suit a habit-led café?

Regular customers want variety without a long wait. A short list of fruit refreshers and coffee–fruit drinks adds non-coffee and lighter options, and they can be made quickly if the café uses ready fruit bases.

What is a coffee–fruit drink?

It is a coffee drink paired with a fruit element, such as an espresso tonic with orange, a cold brew with a berry cold foam, or an iced latte with a mango or cherry note. These are concept examples, not recipes.

Do fruit bases work in compact café formats?

Yes. Ready bases cut peeling, cutting and waste, need less counter space and keep taste consistent across staff and outlets.

Does Frootrition supply cafés?

We develop custom fruit preparations and bases for cafés and food-service partners. Share your brief through the sample request page.
