If your feed is filling up with hotel chefs in aprons tipping fruit into giant bowls, it is cake-mixing season. The tradition marks the start of Christmas baking, and it is mostly about fruit.
What is being reported
Hospitality News (27 October 2026) reported that a Coimbatore hotel held its annual Grand Fruit-Mixing Ceremony with:
- nearly 1,000 kg of fruits and nuts
- almonds, walnuts, cranberries, raisins, figs, black currants and candied ginger
- spirits, demerara sugar and aromatic spices, with the mix left to mature before plum cakes are baked for Christmas
Similar ceremonies are being held in hotels across India through late October and November.
What is in a plum-cake fruit mix
- Dried vine fruit: raisins, sultanas and black currants form the base.
- Other dried fruit: figs, dates, apricots and dried cranberries add chew and colour.
- Candied fruit and peel: orange peel, candied ginger and tutti-frutti (in India usually candied raw papaya) bring sparkle.
- Nuts: almonds, walnuts and cashews for crunch.
- Spice: cinnamon, clove, nutmeg and dry ginger.
Why it is soaked weeks ahead
Soaking lets the dried fruit plump up and the spice and fruit flavours blend. Spirits also help the mix keep. Alcohol-free versions using juice or tea are common at home but should be refrigerated and used sooner.
Fruit-forward ideas for home bakers
- Use more dried figs, apricots and dates for natural fruit sweetness and texture.
- Add orange zest for freshness alongside candied peel.
- Try dried cranberries or amla candy pieces for a tart Indian twist.
- Serve thin slices with fresh fruit such as orange segments or pomegranate.
A note on portions
Dried and candied fruit are concentrated, so they carry more sugar per bite than fresh fruit. Enjoy plum cake as a festive treat in small slices, within a varied diet (ICMR-NIN Dietary Guidelines for Indians, 2024).
