What are fruit analogues?
“Fruit analogue” is barely used on Indian supplier sites, so teams ask what it means before they will put it in a brief.
Analogue, inclusion and fresh fruit
An analogue is a made piece. An inclusion is any piece you meter in. Fresh fruit is the crop, with its water, its season and its softness. The sample-ready pieces Frootrition offers are inclusions: a rum-raisin style with an alcohol-free flavour, and nut options. This guide explains the word. It is not a claim that a shaped analogue is in the current range.
Why a plant asks for them
Season, labour, water in the mix, and a shape that still exists after the freezer or the oven. The reason is operational.
What to specify
Fruit identity, size, shape, colour, the process it must survive, and whether you want a candied cube or a higher-fruit piece. We will not describe the piece as a nutritional equivalent of fresh fruit.
Questions
Are fruit analogues the same as fresh pieces?
No. Fresh pieces vary and often fail in the process. An analogue is built for the process. It still starts from fruit.
Are they the same as tutti frutti?
Not necessarily. Tutti frutti usually means a candied, coloured cube. An analogue brief can be that, or a named-fruit piece. Say which.
Do they replace puree?
They do a different job. Puree carries flavour through the mix. An analogue is there to be seen and bitten.
