Litchi rose, kokum, kala khatta and tender coconut: sorbet and ice-cream concepts Indian buyers already know

Sorbet in October may sound early. It is not, if you plan to sell it in April. The fruits that make Indian sorbets distinctive have short seasons, and summer launches are decided in winter. This page covers concepts Indian buyers already recognise, the sensory reason litchi and rose belong together, when the fruit is available, and how FSSAI classifies a water-based sorbet. It does not give recipes, formulations or blends, and it is not legal advice.
Why litchi and rose belong together
A mini-review of litchi aroma volatiles in Horticulturae gathered the volatile compounds reported for 25 litchi cultivars, 556 in all. It says litchi aroma is mainly determined by monoterpenoids and alcohols, including linalool, geraniol, limonene, β-citronellol, nerol, α-terpineol and cis-rose oxide, which might contribute to the fruit's rose-like or citrus-like aroma. It adds that sulphur-containing compounds may give litchi a special flavour.
That gives two pairing directions with a reason behind them:
- Litchi with rose reinforces the floral notes the fruit already carries.
- Litchi with citrus (lime or lemon) leans on its citrus-like terpenes.
Both are on Indian menus. An Indian bakery sells a litchi rose sorbet, and a café chain sells a rose lychee cooler. For the fruit itself, see our litchi flavour page.
Concepts Indian buyers already know
| Concept | Evidence it sells | Sensory logic | Seasonal input |
|---|---|---|---|
| Litchi rose | Litchi rose sorbet and rose lychee cooler on Indian menus (above) | Shared rose-like aroma compounds | Shahi litchi, late May (NRC Litchi) |
| Kokum | Kokum sorbet in Mumbai, April 2026 (mid-day) | Sharp sourness and deep colour in a water base | Kokum fruits April to June (ICAR-CCARI) |
| Kala khatta, with jamun or kokum | Kala khatta and kokum sorbet (mid-day); jamun kala khatta vegan sorbet in London, August 2026 (Food and Drink Technology) | A tangy, nostalgic flavour; tartness and a dark colour | Depends on the fruit used |
| Tender coconut | Tender coconut ice cream called "clean, refreshing" (mid-day); tender coconut with Naga chilli (Hindustan Times) | Mild, familiar, carries spice or fruit well | Confirm supply and maturity with your fruit partner |
The chatpata versions of these, such as mango chilli and jamun with kala namak, are covered in Chatpata fruit twists.
Did you know? Litchi has a window of days, not months
ICAR-National Research Centre on Litchi's Annual Report 2025 followed Shahi litchi in Muzaffarpur from 17 to 28 May. It found fruit maturity peaked between 25 and 28 May, with redness rising sharply, total soluble solids reaching a maximum of 21.47 °Brix and titratable acidity falling. It names late May as the optimal harvest window for peak quality, nutrition and consumer acceptability. Shahi Litchi of Bihar is a registered Geographical Indication, filed by the Litchi Growers Association of Bihar.
For a sorbet maker, that short window is why litchi products run on fruit processed in season, and why a summer 2027 litchi line needs supply agreed well before May.
How FSSAI classifies a sorbet
- Food category. FSSAI's food category system places "edible ices, including sherbet and sorbet" in category 3.0: water-based frozen desserts, confections and novelties such as fruit sorbet and flavoured ice. Frozen desserts containing primarily dairy ingredients go in category 1.7.
- Product standard. FSSAI's ice lollies or edible ices standard (2.7.5) allows sugar, syrup, fruit, fruit juices, spices and condiments, cocoa, citric acid, and permitted flavours and colours, with permitted stabilisers or emulsifiers up to 0.5 percent by weight, and no artificial sweetener. Ice candy has a separate definition with total sugars of at least 10 percent as sucrose.
- Naming the fruit. If litchi, kokum or coconut is named or pictured, the Labelling and Display Regulations can require its ingoing percentage. "Rose" should come from what is actually in the pack. See Labelling fruit preparations.
Your regulatory team decides which standard and category your product sits under.
Planning questions for a summer 2027 range
- Which fruit, which season? Litchi and kokum both peak in late spring to early summer, so agree processed-fruit supply before then.
- Water base or dairy base? It changes the FSSAI category, the label and how a fruit preparation behaves.
- Floral balance. Rose should support litchi, not cover it. Taste the pairing in the frozen product, where aroma reads differently than in a syrup.
- Colour. Kokum and kala khatta concepts sell on deep colour; test it in your pack and under shop lights.
- Format. Scoop, stick, cup or café cooler each needs a different fruit-preparation texture. See What is a fruit variegate if you plan a ripple.
Litchi tastes floral because its aroma compounds include rose-like terpenoids, so litchi rose is a pairing the fruit itself suggests. Kokum, kala khatta and tender coconut are already on Indian frozen-dessert menus. Plan the fruit now: Shahi litchi peaks in the last days of May.

Questions
Why does litchi go with rose?
A mini-review in Horticulturae that compared the volatile compounds reported for 25 litchi cultivars says litchi aroma is mainly determined by monoterpenoids and alcohols, including linalool, geraniol, β-citronellol, nerol and cis-rose oxide, which might contribute to its rose-like or citrus-like aroma. A rose note reinforces aromas the fruit already has, which is why the pairing reads as natural rather than added.
When is litchi in season in India?
ICAR-National Research Centre on Litchi's Annual Report 2025 monitored Shahi litchi from 17 to 28 May and identified late May, 25 to 28 May, as the optimal harvest window for peak quality and consumer acceptability. At that point it recorded a maximum of 21.47 °Brix total soluble solids. Shahi Litchi of Bihar is a registered Geographical Indication.
Is a sorbet a dairy product under FSSAI?
No. FSSAI's food category system (Appendix A) puts edible ices, including sherbet and sorbet, in category 3.0, described as water-based frozen desserts, confections and novelties such as fruit sorbet and flavoured ice. Frozen desserts containing primarily dairy ingredients are in category 1.7. The product standard for ice lollies or edible ices is regulation 2.7.5.
What is kala khatta?
Kala khatta is a tangy flavour that Food and Drink Technology calls nostalgic and beloved across India. It described a jamun kala khatta vegan sorbet launched in London in August 2026 as inspired by that flavour, and mid-day reported a kala khatta and kokum sorbet in Mumbai in April 2026 for buyers who want extra tartness.
Can Frootrition share a sorbet base recipe?
No. We work on fruit preparations and sorbet bases against your process, freezer and label in a sampling project. This page only explains the concepts and the planning questions.
