Iced latte and filter coffee are no longer enough to hold a specialty board. Indian cafés are using fruit cold foam, fruit espresso tonic and fruit-matcha drinks to keep the menu moving. For a fruit-preparation supplier, that means a different brief from a bakery filling or a yoghurt variegate. This page is the planning checklist. It gives no recipes or formulas, and it is not legal advice.

The drinker's companion is Coffee refreshers, sparkling espresso and nitro explained. Café fruit-coffee pairings without foam detail are on Fruit preparations for coffee café drinks.

🧋 Three formats, three jobs for the fruit

FormatWhat the guest tastes firstWhat the fruit base must do
🫧 Fruit cold foamAerated milk topper, then the drinkClear fruit identity after aeration; stable with milk or plant milk
🍊 Fruit espresso tonicEspresso + tonic + fruitBright acidity and colour that survive dilution
🍵 Fruit-matchaMatcha plus fruitAroma and colour that read through grassy bitterness

Restaurant India, May 2026, described seasonal café boards that already mix regional fruit sodas with experimental coffee drinks. Espresso tonic ranges with citrus and peach-lime profiles have also been reported on national specialty menus in 2026. Treat those as format signals, not as a brief to copy.

📋 Spec checklist before you sample

Write these into the sample request:

  1. Finished format — cold foam topper, espresso tonic, fruit-matcha latte, or RTD
  2. Target Brix range of the preparation (not a recipe — a receiving spec)
  3. Titratable acidity / pH window the drink team will taste against
  4. Colour — cloudy puree vs clearer juice-style; expected shade in milk and in tonic
  5. Dairy / plant-milk behaviour — does the base split foam, feather in hot milk, or hold cold
  6. Fruit named on the menu — so labelling percentage rules can be checked if the drink is packed
  7. FSSAI category your advisor has chosen for the finished food (café serve vs packaged beverage)

Coffee's own acidity matters for tonic formats. A 2018 Scientific Reports study found hot and cold brews from the same coffees had pH about 4.85 to 5.13. Fruit that fights that brightness tastes muddy; fruit that matches it tastes intentional.

🎨 Concept fruits that usually read in these drinks

  • Citrus and passion fruit — tonic and sparkling espresso
  • Mango and strawberry — cold foam and fruit-matcha
  • Berry and stone fruit — cold foam colour stories
  • Kokum and litchi — Indian-leaning tonics and mocktail-style coffee drinks

These are sensory starting points. They are not a formula sheet. Colour-stable options for pink and purple refresher bases are discussed on Litchi, dragon fruit and jamun bases.

🚫 What this page will not do

  • Publish dosages, blend ratios or stabilizer systems
  • Promise a "no added sugar" claim for a café drink
  • Name a finished-food standard for your SKU

If the packed drink will claim "no added sugar", read Zero-added-sugar dairy, dessert and bakery fruit bases and have your advisor apply Regulation 6 to the finished formula.

Questions

What is fruit cold foam?

Cold foam is milk or a milk alternative aerated without heat and spooned over a cold drink. Fruit cold foam is that topper flavoured with a fruit preparation or puree so the first sip is mango, strawberry or similar. Specialty menus in 2026 list fruit cold foams on cold brew and matcha. The fruit base has to taste clear after aeration and must not split the foam in the cup.

What should be on a fruit-espresso-tonic brief?

Coffee is already acidic: a 2018 Scientific Reports study measured hot and cold brew pH around 4.85 to 5.13. A fruit base for an espresso tonic usually supplies matching brightness (citrus, passion fruit, berry) plus a colour the guest can see through the tonic. Settle Brix, acidity, whether the base is cloudy or clear, and whether the finished drink is a café serve or an RTD with its own standard.

Can the same base work for fruit-matcha?

Sometimes, after tasting. Matcha brings grassy bitterness and a strong green colour. Fruit that reads through that profile tends to be aromatic (mango, strawberry, passion fruit) rather than delicate. Colour stability and sweetness perception both change when matcha is present, so the brief should say "for fruit-matcha" rather than reuse a soda syrup line blindly.

Does Frootrition publish recipes for these drinks?

No. We sample fruit preparations against your drink, equipment and label. This page covers concepts and planning questions only.
