No-added-sugar ice cream and bakery: fruit solids plus sweeteners (concept checklist)

Makers chasing no-added-sugar ice cream, yoghurt swirls and bakery fillings usually discover that sweetness and structure are different briefs. Fruit solids help one; intense sweeteners help another; FSSAI's claim rules gate both. This page is a concept checklist, not a formula sheet, and not legal advice.
Shoppers can read the companion Monk fruit texture limits and No added sugar vs sugar-free labels.
🥭 Split the sensory jobs
| Job | Fruit solids (pulp / puree / preparation) | Intense sweetener |
|---|---|---|
| Sweet taste | Partial, fruit-dependent | Primary sucrose gap |
| Acidity / brightness | Strong lever | Weak |
| Colour / aroma | Strong lever | Weak |
| Freeze point / bulk | Limited | Usually needs a bulking partner |
| Bakery spread / browning | Filling phase only | Crumb phase still needs its own plan |
Mint Lounge, 23 October 2026, described ice cream kitchens treating sugar as roughly a fifth of the mix and bakery teams reworking mouthfeel when monk fruit replaced sucrose. Use that as a signal, not a recipe.
📜 Claim gate before artwork
Regulation 6 of the Advertising and Claims Regulations still requires all four non-addition conditions. Non-reconstituted concentrated fruit juice and dried fruit paste are listed as sugar substitutes that can block the claim. Honey and jaggery count as sugars. If sugars are natural, plan CONTAINS NATURALLY OCCURRING SUGARS. Details: Zero-added-sugar dairy, dessert and bakery fruit bases.

Questions
Can fruit puree alone sweeten ice cream enough?
Sometimes for a fruit-forward sorbet or water ice; dairy ice cream usually still needs a sweetener plan for freeze point and scoop. Taste fruit percentage against the claim path before you print no added sugar.
Do dates or jaggery help a no-added-sugar claim?
No. They count as sugars for Regulation 6. See our zero-added-sugar dairy bases page.
Where do bakery fillings fit?
Fruit fillings can cut refined sugar in the fruit phase while the crumb sweetener is briefed separately. Claim sign-off is per finished food, not per component alone.
Is this a formula?
No. Frootrition publishes concepts and labelling readings only.
