Maharashtra FDA dairy crackdown: hygiene and storage checklist for milk and dessert makers

Late October 2026 put milk storage back on the front page in Mumbai. The Hindu, 25 October 2026, reported Maharashtra FDA destroying 564 litres of milk in city inspections on 23–24 October, inside a statewide action of about 43.56 tonnes of food and 719.2 litres of milk and ghee (about ₹1.56 crore). For dairies, kulfi counters and fruit-dairy dessert lines, the useful output is a hygiene checklist, not a blame thread. This is not legal advice.
🧊 What the drive highlighted
- Suspected adulteration or substandard loose milk
- Unhygienic storage and sanitation
- Milk in plastic bags/cans outside prescribed conditions
- Improper labelling on seized stock
- Parallel licence suspensions at seven Mumbai eateries over Schedule 4 failures (Mint)
✅ Maker checklist (concept level)
- Valid licence/registration for every premise that stores or sells milk.
- Cold-chain and containers that match the product standard — not improvised bags.
- Labels and batch/date marks on packed SKUs.
- Handler medical certificates and kitchen Schedule 4 basics (see companion café post).
- Fruit preparations for lassi, shrikhand or ice cream held per their own storage brief — cold-chain context.

Questions
What triggered the milk destruction?
Reporting described inspections finding suspected substandard loose milk, hygiene failures and milk stored or sold in plastic bags and cans without prescribed conditions. Samples went for lab analysis; some registrations faced suspension proceedings.
Does this apply only to loose milk?
Loose milk was prominent in Mumbai actions, but the statewide drive also covered broader food stock. Packaged dairy and dessert lines still need licence, label and cold-chain discipline.
Where do fruit preparations fit?
Fruit-dairy desserts inherit both fruit-prep and dairy hygiene duties. Keep fruit bases in specified storage and never blur veg/non-veg or allergen controls in shared kitchens.
Is this legal advice?
No. It is a checklist reading of public enforcement reporting and Schedule 4 expectations.
