Ice cream ingredient expiry: fruit bases and additives watch for makers

Ice cream plants live or die on incoming lots. The Indian Express reported Karnataka FSDA inspecting 45 ice cream units, collecting 70 samples spanning ice cream, milk, milk powder, flavourings, sugar and additives, and flagging expired milk, sweeteners, caramel and khoa at named sites, plus hygiene and labelling gaps elsewhere. Fruit bases are not exempt. This is not legal advice.
⏰ What to watch
- Expiry on milk powders, sweeteners and fruit pulp alike
- Flavouring and caramel lots past date
- Khoa and other dairy solids in shared cold rooms
- Label completeness on packed SKUs
✅ Concept checklist
- FIFO on pulp, puree and dairy powders.
- Quarantine expired lots — do not “use up” into variegates.
- Keep fruit-prep storage separate from open allergen or non-veg zones when Schedule 4 applies.
- Align claim language with what is actually in the mix — labelling fruit preparations.

Questions
What was sampled?
Reporting listed ice cream, milk, milk powder, flavouring substances, sugar, food additives and other raw materials sent for lab analysis.
Do fruit preparations count as raw materials here?
Yes in practice. Pulp, puree and variegates need lot dates and storage that match the spec — same shelf as dairy powders.
Is this legal advice?
No. It is a checklist reading of public enforcement reporting.
